The Mustard Seed company started in Missoula, Montana in 1978 by sisters Nancy and Betty Tokumoto along with Betty’s husband, David Hall. Betty and Nancy grew up in Okinawa, Bangkok, and Hawaii and then attended college in Oregon; these experiences provided them with the unique ability to create and blend the cooking styles of the Far East with the tastes from the Pacific Northwest.
In 1992, the Noodle Express concept was introduced at the Southgate Mall located in Missoula, Montana as well. The concept behind the creation of the Noodle Express was to deliver the same great flavors of the Mustard Seed but in a fast-casual environment for everyone to enjoy.
Today, the Mustard Seed and Noodle Express restaurants span over three states, including Montana, Idaho, and Washington.
