OUR HISTORY

THE MUSTARD SEED:

The Mustard Seed was started in 1978 in Missoula, Montana by a group of friends and family. Included in that group were Betty and Nancy Tokumoto and Betty's husband, David Hall, who still is active in the company today.  Betty and Nancy grew up in Okinawa, Bangkok, and Hawaii and attended college in Oregon; so they have a unique ability to blend the cooking styles of the Far East with the tastes of the Pacific Northwest.  Gary Siemens, a Missoula physician joined the company in 1984 and Craig Langel, an accountant, joined the company in 1997.

Several of our other partners have grown from within our company. Ed Schafer started out in 1986 at our downtown Spokane Mustard Seed as a busboy. He worked his way up to become General Manager and in 1999 became a partner of both the Spokane Mustard Seed’s. Ed currently is the Managing Partner of the Northtown Mall Mustard Seed while his wife, Sabrina Schafer, is the Managing Partner of the Spokane Valley restaurant. Kevin Odenthal opened our Billings Noodle Express as the General Manager and a Partner in 1998. He then helped us open the Mustard Seed in Billings and became the Managing Partner of that restaurant. Larry Ross started as a line cook in High School when we opened our Spokane Valley Mustard Seed in 1987. After working for us for 5 years he took a 10 year leave and returned to us in 2002 as part of our management company. In 2004 he became a partner of several of the Noodle Express Restaurants. He is now the Director of Operations for the Company.

Our Asian-style dishes are prepared with fresh vegetables, lean meats, and light sauces. Most items at the Mustard Seed are prepared from scratch: Our vegetables and meats are cut fresh every day, and our signature sauces and dressings are made by hand. Our menu is healthy - we never add MSG or oxidants. We have always tried to provide the best quality at a reasonable price. Our facilities offer a casual, comfortable atmosphere where we know you will enjoy your dining experience. If you prefer, take-out and delivery services are available.

The Mustard Seed continually strives to bring imaginative and tasty new dishes to our already expansive menu. We thrive on creating a well mixed Asian blend of dishes. Recently we have added new dishes such as our General Mustards Chicken, Green Beans, Shanghai Beef Noodle & Burmese Shrimp Noodle along with many other specials that our restaurants create. Our Missoula Mustard Seed has created a new dessert menu that offers “Spectacular Desserts” that are made fresh at our restaurant daily. We have three locations to serve you; Northtown Mall in Spokane, Southgate Mall in Missoula and our newest one on 15th & Grand in Billings, MT.

We are proud of our reputation in the community and for the recognition our restaurants have received in the past. We have received numerous awards for the best Asian restaurant by the Spokesman Review, Spokane Inlander, Inland Northwest Family Magazine, the Missoulian, and many others. Our customers have come to expect great food and excellent service. We strive everyday to meet those expectations.



THE NOODLE EXPRESS:

The Noodle Express concept started in Missoula, Montana in 1992 at Southgate Mall. The Noodle Express is a fast-casual concept that offers several of the most popular Mustard Seed dishes in a fast casual environment. Teriyaki rice bowls and Japanese grilled noodles are some of our most popular dishes at the Noodle Express. The Noodle Express has counter service rather than table service.

We currently have 6 locations with two in Spokane, two in Missoula, one in Hayden, Id. and one in Billings, MT. Two of our locations have a pick-up window for you to order ahead and drive up to get your order without leaving your car. These are located on North Division in Spokane and Broadway Ave. in Missoula. We are currently working on opening 2 more locations; one in Great Falls, Montana and the other in Post Falls, Idaho.

We have recently added a Singapore Style & a Sweet Thai Glaze to our mix of dishes that we offer at several of our restaurants. We’re a great place to stop when you’re on the go and you only have time for a quick meal. We invite you to stop by the next time you are in the neighborhood.
